“Recent studies have shown that quercetin present in red wines could interfere with correct metabolism of alcohol and cause headaches. According to this study, the headaches suffered by some could be attributed to a dysfunctional variant of ALDH2, the enzyme that metabolizes acetaldehyde, which would lead to its accumulation. In 2021, an enzyme product was tested both in the laboratory and on a winery scale. This figure shows the results of the experiment carried out in the winery. After one month of testing, the concentration of bound quercetin was significantly reduced.”
