“Adding flower extracts significantly improved all sensory attributes in reconstitued dealcoholized wines (except color intensity, bitterness, hotness, acidity, and astringency) compared to dealcoholized wines. The higher rating for these attributes, particularly aroma intensity, fruity and floral flavor, and red fruits in reconstituted dealcoholized wines compared to dealcoholized wines, was expected because the fruity and floral aroma series were most prominent in reconstituted dealcoholized wines.” (Control merlot in orange).
